A Mosque Among The Stars was the first anthology that dealt with the subject of Muslim characters and/or Islamic themes and Science Fiction. It is now available for free. I haven't read it so I don't know if it's any good, but I wanted to pass this along since it is relevant to our interests. Also, there are interesting interviews and such in the rest of the site.
